I want to do a protein rest at 50deg before mashing at 66. I currently use Beersmith, but I can't find anywhere in the program that will tell me how much water (say at 90deg) I will need to add to the 14L mash to raise it from 50 to 66. Can anyone help?

What is the consensus on filtering after fermentation is finished? I have a bitter that will sit in the fridge for a few weeks as my kegs are all full. Should I filter and put it in the fridge, or filter when I am ready to keg?
